Jalapeno Rice
Not too spicy, a great side dish for roast chicken or grilled meat.
What you need
- 2 Tbl Olive oil
- 1/2 cup finely minced onion
- 1 large or 2 small minced jalapeno, seed and membrane removed
- 1 large garlic clove, minced
- 1 tbl tomato paste
- 1 cup white basmati rice
- 1/2 tsp kosher salt
- 1 1/2 cup water
- 2 tbl minced fresh parsley leaves
- 1 tbl minced fresh parsley stems (optional)
How to make it
- Heat olive oil and sauté onion and jalapeno until softened
- Add rice, garlic and tomato paste with kosher salt; cook and stir until tomato paste is evenly distributed
- Add water and optional parsley stems, bring to a boil, cover and reduce heat to low
- Simmer for 10 minutes, turn off heat and allow to stand for 10-15 minutes until water is absorbed
- Fluff rice and garnish with minced parsley leaves to serve
