Jalapeno Rice

Not too spicy, a great side dish for roast chicken or grilled meat.

What you need

  1. 2 Tbl Olive oil
  2. 1/2 cup finely minced onion
  3. 1 large or 2 small minced jalapeno, seed and membrane removed
  4. 1 large garlic clove, minced
  5. 1 tbl tomato paste
  6. 1 cup white basmati rice
  7. 1/2 tsp kosher salt
  8. 1 1/2 cup water
  9. 2 tbl minced fresh parsley leaves
  10. 1 tbl minced fresh parsley stems (optional)

How to make it

  1. Heat olive oil and sauté onion and jalapeno until softened
  2. Add rice, garlic and tomato paste with kosher salt; cook and stir until tomato paste is evenly distributed
  3. Add water and optional parsley stems, bring to a boil, cover and reduce heat to low
  4. Simmer for 10 minutes, turn off heat and allow to stand for 10-15 minutes until water is absorbed
  5. Fluff rice and garnish with minced parsley leaves to serve
