Labne (Yogurt Cheese)

Any yogurt will work, but homemade is really best. This is a nice hors d'oeuvres or mezze portion.

What you need

  1. 2 cups home made whole milk yogurt
  2. 1/2 - 1 tsp kosher salt or to taste

How to make it

  1. Blend yogurt and salt
  2. Place yogurt into a colander lined with cheesecloth which you have set into a bowl
  3. Cover with plastic and refrigerate for 2-3 days until yogurt has thickened and whey has separated into the bowl - you may need to discard the whey each day so you have room for the yogurt to sit above the liquid
  4. Remove labne from the colander to a plate or serving bowl and peel or scrape off cheesecloth
  5. Let the labne work until you have a consistency you like

This is delicious sprinkled with sweet spanish paprika and drizzled with good olive oil. Serve with flatbread or crackers and vegetables.
