Blue Cheese Lamb Burgers

This can be done in a small size or regular size - or even jumbo size if you want. Makes 4 regular burgers, or 8 small (or 2 jumbo!).

What you need

  1. 1 pound ground lamb - you can make your own if you have a food processor using lamb sirloin
  2. 1/2 yellow onion, grated
  3. 1 tbl fresh minced parsley
  4. 1 tbl fresh thyme
  5. 1 large clove garlic, grated
  6. 1 tbl worcestershire sauce
  7. 1 tsp kosher salt
  8. Fresh ground black pepper
  9. 2 red bell peppers, seeds & stem removed and sliced into thin strips
  10. 1 sweet onion, cut in half and sliced
  11. 1 tsp kosher salt
  12. Fresh ground black pepper
  13. 4 oz. blue cheese

How to make it

  1. In a mixing bowl combine first 8 ingredients (above the line) blending very well - set aside
  2. Sauté bell pepper and onion with salt & pepper until softened and lightly browned - keep warm while cooking burgers
  3. Form lamb mixture into burgers
  4. Over high heat, sear one side of burgers, then turn and reduce heat to medium-high
  5. When browned on both sides, reduce heat to medium and cook until medium or desired doneness
  6. Turn off heat leaving pan in place
  7. Divide blue cheese and place equal amount on top of each burger
  8. Cover pan with lid or foil and let stand for 3-5 minutes until cheese is softened
  9. Divide vegetables between 4 plates and top with burgers
