Lemon Passion Cookies

Incredibly easy recipe for cookies with intense lemon flavor. It's also a good way to use fresh lemons. This makes about 18 small cookies.

What you need

  1. 6 Tablespoons melted butter
  2. zest and juice of 1 home grown lemon (medium sized)
  3. 1/8 tsp salt
  4. 1/2 cup sugar
  5. 1 egg yolk
  6. 2-4 tablespoons almond meal or finely ground almonds or other nut
  7. 1 cup whole wheat pastry flour

How to make it

  1. Preheat oven to 375º
  2. Mix butter, sugar, lemon zest and juice until sugar has dissolved
  3. Add egg yolk and incorporate thoroughly
  4. Add salt, ground almonds and one half cup flour
  5. Use a spatula to fold mixture until completely combined
  6. Add remaining half cup flour and fold again until fully incorporated
  7. Chill for one to two hours
  8. Cover a baking sheet with parchment paper
  9. Use a small cookie scoop to make 3/4 - 1 inch balls, spaced about 2 inches apart
  10. Bake for 20 minutes until the edges are lightly browned (rotate the tray halfway through baking for even cooking)
  11. Remove from oven and let rest on baking sheet for 2 minutes
  12. Remove cookies to a rack to cool completely
