Lemon Passion Cookies
Incredibly easy recipe for cookies with intense lemon flavor. It's also a good way to use fresh lemons. This makes about 18 small cookies.
What you need
- 6 Tablespoons melted butter
- zest and juice of 1 home grown lemon (medium sized)
- 1/8 tsp salt
- 1/2 cup sugar
- 1 egg yolk
- 2-4 tablespoons almond meal or finely ground almonds or other nut
- 1 cup whole wheat pastry flour
How to make it
- Preheat oven to 375º
- Mix butter, sugar, lemon zest and juice until sugar has dissolved
- Add egg yolk and incorporate thoroughly
- Add salt, ground almonds and one half cup flour
- Use a spatula to fold mixture until completely combined
- Add remaining half cup flour and fold again until fully incorporated
- Chill for one to two hours
- Cover a baking sheet with parchment paper
- Use a small cookie scoop to make 3/4 - 1 inch balls, spaced about 2 inches apart
- Bake for 20 minutes until the edges are lightly browned (rotate the tray halfway through baking for even cooking)
- Remove from oven and let rest on baking sheet for 2 minutes
- Remove cookies to a rack to cool completely
