Lemon Relish

This recipe calls for preserved lemon which is very different from fresh lemon. They cannot be substituted, regardless of what anyone says. It takes a few weeks to make preserved lemons, but it is a very simple thing to do. You can also purchase preserved lemons.

Approximately 1/2 cup preserved lemon rind, diced
2 tbl chopped parsley
2 tbl chopped cilantro
2 scallions, chopped
1 clove garlic, minced
1 tsp smoked paprika
1/4 tsp kosher salt
1 Tbl Olive oil plus extra* as needed
  • Combine all ingredients in a bowl - add enough olive oil to coat the lemon and herbs
  • Allow to stand for 30 minutes
  • Serve with grilled fish or vegetables

Although my recipe for Preserved Lemons doesn't call for adding olive oil, some recipes do. If you purchase preserved lemons, they may have olive oil added already, in which case you will only require the 1 Tbl as direct above.
