Marian C's Frittata
This recipe is from Frank's grandmother. I use italian sausage or ground turkey seasoned with smoked paprika. I don't use any bread crumbs. I sometimes add another cheese to the vegetable mixture.
What you need
- 4 medium length (about 5 inches) link pork sausages, skinned and cut into
smaller (1/2" to 1") pieces
- 1 small white onion, chopped fine
- 1 clove garlic, chopped fine
- 2 packages frozen artichokes
- 1/2 cup, unseasoned bread crumbs
- 4 eggs, well-beaten
- 2 tablespoons, chopped fresh parsley
- 1/4 cup, grated Parmesan cheese
- 1 teaspoon, salt
- 1/2 teaspoon, coarsely ground black pepper
- 1/4 cup, olive oil
How to make it
- Sauté sausage, with onion and garlic, in olive oil, over medium flame
- Add artichokes and cook over low heat until tender, about 10 minutes
- Season to taste with salt and pepper
- Stir in eggs and breadcrumbs
- Spread mixture into an oiled baking dish
- Sprinkle
with parsley and cheese and bake at 350 degrees for 30 minutes
