Marian C's Frittata

This recipe is from Frank's grandmother. I use italian sausage or ground turkey seasoned with smoked paprika. I don't use any bread crumbs. I sometimes add another cheese to the vegetable mixture.

What you need

  1. 4 medium length (about 5 inches) link pork sausages, skinned and cut into
    smaller (1/2" to 1") pieces
  2. 1 small white onion, chopped fine
  3. 1 clove garlic, chopped fine
  4. 2 packages frozen artichokes
  5. 1/2 cup, unseasoned bread crumbs
  6. 4 eggs, well-beaten
  7. 2 tablespoons, chopped fresh parsley
  8. 1/4 cup, grated Parmesan cheese
  9. 1 teaspoon, salt
  10. 1/2 teaspoon, coarsely ground black pepper
  11. 1/4 cup, olive oil

How to make it

  1. Sauté sausage, with onion and garlic, in olive oil, over medium flame
  2. Add artichokes and cook over low heat until tender, about 10 minutes
  3. Season to taste with salt and pepper
  4. Stir in eggs and breadcrumbs
  5. Spread mixture into an oiled baking dish
  6. Sprinkle with parsley and cheese and bake at 350 degrees for 30 minutes
