Mexican Fruit Cake

I don't know the exact history of this cake, but one of Frank's grandmother's friends used to make it for her from time to time.

What you need

  1. »«Cake»«
  2. 1 20 oz can crushed pineapple - undrained
  3. 2 cups flour
  4. 1 cup chopped nuts
  5. 2 tbl soda
  6. 2 cups sugar
  7. 2 eggs
  8. »«Frosting»«
  9. 6 oz. cream cheese
  10. 1 cup powdered sugar
  11. 2 tbl warm melted butter
  12. 1/2 tsp vanilla

How to make it

  1. Mix all cake ingredients together
  2. Put into a greased & floured 9 x 13 in. pan
  3. Bake at 350 for 30 - 35 minutes
  4. Mix frosting ingredients together
  5. Cool cake and frost
