Middle Eastern Rice Pudding

No bake rice pudding uses jasmine rice and milk.

What you need

  1. 1/2 cup jasmine rice
  2. 1 1/2 cups water
  3. 2 cups milk
  4. 1 Tbl Rosewater (may sub. 1 tsp vanilla or 1/4 vanilla bean, split)
  5. pinch of Salt
  6. 1/4 cup granulated sugar
  7. cinnamon

How to make it

  1. Cook the rice, uncovered in water for 20-25 minutes, until the water is absorbed.
  2. Add the milk, rosewater (or vanilla), salt and sugar.
  3. Bring to the boil and simmer for 25 minutes.
  4. Remove vanilla bean if used.
  5. Pour into a serving dish and sprinkle with cinnamon.
