Multi Grain Griddle Cakes
What you need
- 1 c whole wheat pastry flour or 1/2 c whole wheat and 1/2 c AP flours
- 1/3 cup old fashioned oats
- 1/3 cup ground flax meal
- 1/3 cup whole almond meal
- 1 1/2 cup warm water, divided
- 1/8 tsp kosher or sea salt
- 1 tsp baking soda
- 2 eggs
- 2 Tablespoons oil
- 1 Tablespoon agave syrup
How to make it
- Preheat a griddle to 375-400º
- Mix oats, flax and almond meal with 1 cup warm water - let stand 30 minutes
- Blend flour, salt and baking soda and add to oat mixture - mix until shaggy
- Mix oil, eggs, agave and 1/2 cup warm water in a small bowl
- Add to the oat mixture and stir until well incorporated - let stand 10 minutes
- Spoon 1/4 - 1/3 cup portions onto griddle and spread to 3-4 inch rounds
- Cook 5 minutes on first side until golden brown, flip and cook 2-3 minutes on second side
- Keep warm in a low oven
Makes 12 three to four inch cakes. Serve with your favorite sweet or savory toppings. Variation: Add one banana chopped into 1/4 inch dice to batter before cooking
