Multi Grain Griddle Cakes

What you need

  1. 1 c whole wheat pastry flour or 1/2 c whole wheat and 1/2 c AP flours
  2. 1/3 cup old fashioned oats
  3. 1/3 cup ground flax meal
  4. 1/3 cup whole almond meal
  5. 1 1/2 cup warm water, divided
  6. 1/8 tsp kosher or sea salt
  7. 1 tsp baking soda
  8. 2 eggs
  9. 2 Tablespoons oil
  10. 1 Tablespoon agave syrup

How to make it

  1. Preheat a griddle to 375-400º
  2. Mix oats, flax and almond meal with 1 cup warm water - let stand 30 minutes
  3. Blend flour, salt and baking soda and add to oat mixture - mix until shaggy
  4. Mix oil, eggs, agave and 1/2 cup warm water in a small bowl
  5. Add to the oat mixture and stir until well incorporated - let stand 10 minutes
  6. Spoon 1/4 - 1/3 cup portions onto griddle and spread to 3-4 inch rounds
  7. Cook 5 minutes on first side until golden brown, flip and cook 2-3 minutes on second side
  8. Keep warm in a low oven

Makes 12 three to four inch cakes. Serve with your favorite sweet or savory toppings. Variation: Add one banana chopped into 1/4 inch dice to batter before cooking
