Sugar Free Peach Cobbler

What you need

  1. 2 lbs fresh peaches (measured before peeling and pitting), peeled, pitted and sliced
  2. 2 tsp cornstarch
  3. 1 tsp lemon juice
  4. Pinch kosher salt
  5. 1/4 - 1/3 cup agave syrup
  6. Single recipeshortcake cobbler topping

How to make it

  1. Preheat oven to 375º
  2. Make shortcake topping, wrap in plastic and chill while preparing the peaches
  3. Mix peaches with cornstarch and agave syrup and let stand briefly for juices to form
  4. Lightly oil or butter a small baking dish (8 inch square, 7 x 11 inches, etc.)
  5. Pour peach mixture into dish and spread evenly
  6. Cut or form 6-8 biscuits from the topping approximately 1/2 inch thick
  7. These can be brushed with melted butter to help brown and you can add a teaspoon of agave syrup to sweeten as well - this is an optional step
  8. Bake for 45-55 minutes until biscuits are lightly browned and peaches are juicy and bubbling.
  9. Cool slightly before serving. Great warm or at room temperature.
