Sugar Free Peach Cobbler
What you need
- 2 lbs fresh peaches (measured before peeling and pitting), peeled, pitted and sliced
- 2 tsp cornstarch
- 1 tsp lemon juice
- Pinch kosher salt
- 1/4 - 1/3 cup agave syrup
- Single recipeshortcake cobbler topping
How to make it
- Preheat oven to 375º
- Make shortcake topping, wrap in plastic and chill while preparing the peaches
- Mix peaches with cornstarch and agave syrup and let stand briefly for juices to form
- Lightly oil or butter a small baking dish (8 inch square, 7 x 11 inches, etc.)
- Pour peach mixture into dish and spread evenly
- Cut or form 6-8 biscuits from the topping approximately 1/2 inch thick
- These can be brushed with melted butter to help brown and you can add a teaspoon of agave syrup to sweeten as well - this is an optional step
- Bake for 45-55 minutes until biscuits are lightly browned and peaches are juicy and bubbling.
- Cool slightly before serving. Great warm or at room temperature.
