No Knead Whole Grain Bread

High protein whole grain bread that you don't have to knead.

What you need

  1. 1 1/2 cups whole wheat flour
  2. 1/2 cup spelt flour
  3. 1/2 cup rye flour
  4. 1/2 cup besan
  5. 2 Tablespoons ground flax
  6. 1 tsp yeast
  7. 1 1/2 tsp salt
  8. 1/2 cup plain, nonfat yogurt
  9. 1 cup water

How to make it

  1. Blend flours, salt, flax and yeast in a large bowl
  2. Add yogurt and water and stir until well mixed and a bit shaggy
  3. Cover with plastic and set in a warm spot (70º) for four hours - the dough will at least double in bulk
  4. Grease a 8-9 inch cast iron skillet with plenty of olive oil
  5. Scrape dough into skillet and with oil on your hands, spread out over the base of the pan gently
  6. Rub oil on the plastic wrap and cover
  7. Place back in a warm spot for another hour
  8. Preheat oven to 350º
  9. Bake bread 45-55 minutes
  10. Remove from pan to a wire rack to cool
