No Knead Whole Grain Bread

High protein whole grain bread that you don't have to knead.
What you need
- 1 1/2 cups whole wheat flour
- 1/2 cup spelt flour
- 1/2 cup rye flour
- 1/2 cup besan
- 2 Tablespoons ground flax
- 1 tsp yeast
- 1 1/2 tsp salt
- 1/2 cup plain, nonfat yogurt
- 1 cup water
How to make it
- Blend flours, salt, flax and yeast in a large bowl
- Add yogurt and water and stir until well mixed and a bit shaggy
- Cover with plastic and set in a warm spot (70º) for four hours - the dough will at least double in bulk
- Grease a 8-9 inch cast iron skillet with plenty of olive oil
- Scrape dough into skillet and with oil on your hands, spread out over the base of the pan gently
- Rub oil on the plastic wrap and cover
- Place back in a warm spot for another hour
- Preheat oven to 350º
- Bake bread 45-55 minutes
- Remove from pan to a wire rack to cool
