Oatmeal Pancakes

This has turned out to be our favorite recipe for pancakes

What you need

  1. 2C buttermilk
  2. 2/3C old fashioned rolled oats
  3. 1 egg
  4. 2TBS. brown sugar
  5. 1/3C. all-purpose flour
  6. 1/2C. whole wheat flour
  7. 1tsp. baking soda
  8. 2TBS. vegetable oil

How to make it

  1. The night before making pancakes, mix buttermilk and oats together in bowl. Cover and refrigerate.
  2. Next morning, beat egg in mixing bowl and stir in brown sugar. Add flours, baking soda, oil and oatmeal-buttermilk mixture. Mix thoroughly.
  3. Heat griddle or skillet sprayed with non-stick solution and drop batter by tablespoons onto griddle. Brown on each side and keep warm in a slow oven.

Makes about 12 (4-inch) pancakes.
