Besan Flatbread with Onion - Onion Farinata

High protein - low carb bread recipe. My basic recipe with onion.
What you need
- 1 cup besan (chickpea flour)
- 1 tsp kosher salt
- 1 tsp (or more) ground black pepper plus more for serving
- 1 cup water
- 3 T olive oil
- 2 T olive oil
- 1 small or 1/2 large yellow or sweet onion, thinly sliced
How to make it
- Blend besan, salt and pepper together pressing out lumps with a spoon
- Whisk in about 1/3 of the water to dampen flour
- Continue adding water slowly, whisking out lumps
- Cover batter with plastic wrap and set aside a minimum of 30 minutes ideally 3-4 hours or in the refrigerator overnight
- Sauté onion slices in a little oil in the cast iron skillet you'll use to cook the farinata - let cool
- Place a cast iron skillet (9 inch) into middle of oven and preheat oven to 450º
- Add 3 T oil to the batter and blend well
- Stir batter and add half to the skillet, tipping to coat base of pan
- Quickly sprinkle 1/2 the onion over the top
- Bake until batter is browning around edges (about 8-10 minutes) and firm to the touch
- Turn on broiler and broil until top is browned in spots
- Remove farinata to a cooling rack and repeat with remaining oil and batter
