Besan Flatbread with Onion - Onion Farinata

High protein - low carb bread recipe. My basic recipe with onion.

What you need

  1. 1 cup besan (chickpea flour)
  2. 1 tsp kosher salt
  3. 1 tsp (or more) ground black pepper plus more for serving
  4. 1 cup water
  5. 3 T olive oil
  6. 2 T olive oil
  7. 1 small or 1/2 large yellow or sweet onion, thinly sliced

How to make it

  1. Blend besan, salt and pepper together pressing out lumps with a spoon
  2. Whisk in about 1/3 of the water to dampen flour
  3. Continue adding water slowly, whisking out lumps
  4. Cover batter with plastic wrap and set aside a minimum of 30 minutes ideally 3-4 hours or in the refrigerator overnight
  5. Sauté onion slices in a little oil in the cast iron skillet you'll use to cook the farinata - let cool
  6. Place a cast iron skillet (9 inch) into middle of oven and preheat oven to 450º
  7. Add 3 T oil to the batter and blend well
  8. Stir batter and add half to the skillet, tipping to coat base of pan
  9. Quickly sprinkle 1/2 the onion over the top
  10. Bake until batter is browning around edges (about 8-10 minutes) and firm to the touch
  11. Turn on broiler and broil until top is browned in spots
  12. Remove farinata to a cooling rack and repeat with remaining oil and batter
