Onion Pork Loin for Slow Cooker

This is a recipe I worked on with Frank's mom when we were trying to update one of the Aunts recipes. It is really delicious and easy.

What you need

  1. 1 pork loin roast about 2.5 lbs.
  2. 1 cup fruity red wine
  3. 2 small sprigs fresh parsley, whole
  4. 2 medium garlic cloves, chopped
  5. 1 tsp onion granules
  6. 1 tsp salt
  7. 1 onion, cut in half and sliced thinly
  8. Freshly ground black pepper
  9. 2 Tbl Olive Oil
  10. 1 tbl chopped fresh parsley for garnish

How to make it

  1. In a slow cooker pan, mix wine, parsley, garlic, onion granules and salt
  2. Place the pork on top
  3. Spread the onion slices over the pork and top with black pepper and olive oil
  4. Cook on medium for about 3 1/2 hours at which point the roast should be very tender
  5. Turn and reduce cooker to warm until ready to serve
  6. Before serving, place the liquid from the pot into a saucepan and reduce by half
  7. Slice the meat and serve with the sauce, garnished with parsley
