Orange & Olive Salad

What you need

  1. 5 oranges
  2. 1/2 cup cured olives such as kalamata
  3. 1/4 lb. Serrano Ham, cut into slivers
  4. 1/4 cup toasted, chopped almonds
  5. 1/4-1/2 cup chopped fresh parsley or 8 fresh mint leaves
  6. Kalamata olive oil
  7. Kosher salt & black pepper

How to make it

  1. Remove ends from 4 of the oranges and peel them
  2. Cut peeled oranges into 1/4 inch thick slices
  3. Arrange slices on serving platter
  4. Scatter olives and ham slivers over the top
  5. Cut remaining orange in half and squeeze juice over the salad
  6. Drizzle with olive oil and sprinkle with chopped almonds and herb
