Orange & Olive Salad
What you need
- 5 oranges
- 1/2 cup cured olives such as kalamata
- 1/4 lb. Serrano Ham, cut into slivers
- 1/4 cup toasted, chopped almonds
- 1/4-1/2 cup chopped fresh parsley or 8 fresh mint leaves
- Kalamata olive oil
- Kosher salt & black pepper
How to make it
- Remove ends from 4 of the oranges and peel them
- Cut peeled oranges into 1/4 inch thick slices
- Arrange slices on serving platter
- Scatter olives and ham slivers over the top
- Cut remaining orange in half and squeeze juice over the salad
- Drizzle with olive oil and sprinkle with chopped almonds and
herb
