Oregano Oil

Extra Virgin Olive Oil
Garlic clove(s), peeled and gently crushed
Several sprigs fresh oregano
- Place oregano sprigs and garlic in a small saucepan
- Pour olive oil over and turn heat to lowest setting
- Heat very slowly, don't allow the olive oil to get too hot or the herbs/garlic to brown
- As soon as you hear or see oil movement, turn off heat and remove to cool
- Leave oregano and garlic in oil to infuse
This can be used in any dish to add a light garlic and oregano flavor. It can be done with any other flavors you wish to use or add. Be careful not to allow the oil to cook the herbs or garlic - no browning should occur. Can be stored for several days at room temperature. For longer storage, strain after 8 hours and refrigerate.
