Plain Pastry for double crust pie

What you need

  1. 2 cups sifted flour
  2. 1/2 tsp salt
  3. 1 cup shortening
  4. 6 tbl ice water

How to make it

  1. Mix flour and salt
  2. Cut shortening into flour mixture until crumbly
  3. Add water 1 tbl at a time just until it makes a workable paste
  4. Divide dough in half
  5. Working quickly, roll dough to about 1/8 inch thickness

Crumb Pie Shell

What you need

  1. 1 1/2 cups fine crumbs
  2. 1/4 cup sugar
  3. 1/2 cup butter, melted

How to make it

  1. Mix crumbs and sugar
  2. Stir in butter
  3. Line pie pan with mixture by pressing firmly into place
  4. Chill for 20 minutes or bake at 350 for 10 minutes. Cool.
  5. Makes one 9 inch shell

Cheese Pastry for single crust pie

What you need

  1. 1/2 cup butter
  2. 1 cup sifted flour
  3. 1/4 pound cream cheese

How to make it

  1. Cut butter into flour
  2. Add cheese and mix to a smooth dough
  3. Chill thoroughly
  4. Roll
