Pie Pastries





Plain Pastry for double crust pie
2 cups sifted flour
1/2 tsp salt
1 cup shortening
6 tbl ice water
  • Mix flour and salt
  • Cut shortening into flour mixture until crumbly
  • Add water 1 tbl at a time just until it makes a workable paste
  • Divide dough in half
  • Working quickly, roll dough to about 1/8 inch thickness

1/4 pound cream cheese
  • Mix flour and salt
  • Cut shortening into flour mixture until crumbly
  • Add water 1 tbl at a time just until it makes a workable paste
  • Divide dough in half
  • Working quickly, roll dough to about 1/8 inch thickness


Cheese Pastry for single crust pie
2 cups sifted flour
1/2 tsp salt
1 cup shortening
6 tbl ice water
  • Cut butter into flour
  • Add cheese and mix to a smooth dough
  • Chill thoroughly
  • Roll
