Pea, Carrot & Mozzarella Salad

What you need

  1. 1 cup fresh or frozen peas
  2. 1 med. carrot, peeled and chopped
  3. 1/2 small stalk celery, chopped
  4. 1 oz. part skim mozzarella, cut into small cubes
  5. 2 Tbl. + 1 tsp. buttermilk
  6. 2 green onions, chopped fine
  7. 1 Tbl. plain low fat yogurt
  8. 1 1/2 tsp. mayonnaise
  9. 1/2 tsp. balsamic or red wine vinegar
  10. 1/2 tsp. dried basil
  11. 1/8 tsp. black pepper
  12. 1/4 tsp. sugar

How to make it

  1. In a small saucepan, boil 1" of water, add peas & carrots, cook 5 minutes.
  2. Drain and rinse with cold water.
  3. In a medium bowl combine remaining ingredients and spoon over vegetables.
  4. Cover and refrigerate until ready to serve.
