Pea, Carrot & Mozzarella Salad

What you need
- 1 cup fresh or frozen peas
- 1 med. carrot, peeled and chopped
- 1/2 small stalk celery, chopped
- 1 oz. part skim mozzarella, cut into small cubes
- 2 Tbl. + 1 tsp. buttermilk
- 2 green onions, chopped fine
- 1 Tbl. plain low fat yogurt
- 1 1/2 tsp. mayonnaise
- 1/2 tsp. balsamic or red wine vinegar
- 1/2 tsp. dried basil
- 1/8 tsp. black pepper
- 1/4 tsp. sugar
How to make it
- In a small saucepan, boil 1" of water, add peas & carrots, cook 5 minutes.
- Drain and rinse with cold water.
- In a medium bowl combine remaining ingredients and spoon over vegetables.
- Cover and refrigerate until ready to serve.
