Peach and Avocado Salad
Our peaches and avocados ripen at about the same time, so this recipe became a staple for July. You could substitute butter lettuce or romaine lettuce if you don't care for bitter greens.
What you need
- 6 cups torn bitter greens such as kale, mustard, dandelion or arugula
- 4 fresh ripe peaches, peeled and thinly sliced
- 2 ripe avocados, peeled and thinly sliced
- 1 large scallion thinly sliced
- 1/2 cup cucumber, very thinly sliced
- 1 T dijon mustard
- 3-4 T fresh lemon juice
- 1 tsp agave syrup (optional)
- 1/2 tsp kosher salt
- 4-6 T olive oil
- Fresh minced cilantro or parsley leaves (optional)
How to make it
- In a salad bowl whisk mustard, lemon juice, agave and salt - add olive oil slowly while whisking
- Add scallion to dressing
- Slice peaches and avocado and coat with the dressing
- Layer cucumber over the top and top with torn greens
- Add minced herbs
- Toss immediately before serving
This salad is good even without the avocado
