Peanut Butter Cookies

What you need

  1. 1 cup peanut butter, room temperature (smooth or chunky)
  2. 1 cup unsalted butter, room temperature
  3. 1 cup sugar
  4. 1 tsp vanilla extract
  5. 1 tsp baking soda
  6. 2 cups flour

How to make it

  1. Heat oven to 350º
  2. Cream peanut butter, butter, vanilla extract and sugar until smooth
  3. Blend flour and baking soda
  4. Stir dry ingredients into butter mixture a little at a time until fully incorporated
  5. Use a cookie scoop to place onto a baking sheet
  6. Bake until set and lightly browned on the bottom

Home made peanut butter: Place 1 lb. unsalted, dry roasted peanuts with 1/2 tsp kosher salt into a food processor. Process until paste forms, then continue processing for a few minutes. It will form a ball then smooth out a couple of times. Drizzle in 2 tsp any type of nut oil; peanut, sunflower, almond, etc. while processor is running and allow to run until butter is fairly smooth. Store in the refrigerator.
