Pineapple Bars

What you need

  1. 1/2 cup butter
  2. 1 cup dark brown sugar, divided
  3. 1 1/3 cups flour, divided
  4. 1 8.25 oz. can crushed pineapple in syrup or juice
  5. 2 eggs
  6. 1 tsp baking powder
  7. 1 tsp ground cinnamon
  8. 1/4 tsp ground nutmeg
  9. 1/4 tsp salt
  10. 1 tsp rum extract
  11. 1 1/2 cups flaked coconut
  12. 1 cup chopped walnuts

How to make it

  1. Heat oven to 350 and lightly grease a 13 x 9 x 2 inch pan
  2. Beat butter and 1/3 cup brown sugar. Blend in 1 cup flour until mixture is crumbly.
  3. Pat onto bottom of prepared pan
  4. Bake for 10 - 15 minutes or until golden. Cool slightly
  5. Drain pineapple well, pressing out liquid with back of spoon
  6. Beat eggs with remaining 2/3 cup brown sugar until thick
  7. Combine remaining 1/3 cup flour, baking powder, cinnamon, nutmeg and salt.
  8. Stir dry ingredients and rum extract into egg mixture.
  9. Fold in pineapple, coconut and nuts.
  10. Spread over crust.
  11. Bake 30 minutes longer or until set.
  12. Cool in pan and cut into bars to serve.
