Plum Frittata with Bacon & Blue Cheese

You may think it an odd combination, but I assure you, it's delicious! Think pancakes with jam & bacon -- but not nearly so heavy. A nice savory fruit dish.

What you need

  1. 8 Italian Prune plums, halved, pits removed each half cut into quarters
  2. 2 strips bacon
  3. 1 minced green onion
  4. 1 tsp fresh minced sage leaves (approx. 2 leaves)
  5. 1 oz. good quality blue cheese
  6. 4 eggs beaten with 2-3 tablespoons water
  7. Fresh ground black pepper or a bit of grated nutmeg or both

How to make it

  1. Preheat oven to 350º
  2. Combine eggs, pepper, green onion, sage and cheese in a mixing bowl
  3. In an oven-safe skillet, slowly render bacon over medium-low heat until slices are very crisp
  4. Remove bacon to paper towels to drain and pour off all but 1 tbl fat - reserve remaining fat
  5. Increase heat to medium and add plums - cook about 1-2 minutes until slightly softened
  6. Add another tablespoon fat to pan
  7. Turn off heat and pour egg mixture over plums - stir gently
  8. Chop bacon into bite sized pieces and distribute evenly
  9. Place into oven for about 15 minutes until just a bit jiggly in the middle
  10. Cool slightly before serving
