Kathy's Potato Salad

What you need

  1. 10 med Potatoes
  2. 8 hard boiled eggs
  3. 2 jars midget sweet pickles, sliced
  4. 1/2 Chopped Red onion
  5. 1 clove garlic (optional)
  6. 1/2 jar of pickle juice or more
  7. 1/2 Cup French dressing
  8. 1 - 1 1/2 cup Best Foods Real mayonaise
  9. Salt and pepper to taste

How to make it

  1. Cook potatoes until done and dice into large bowl
  2. Chop eggs and add to bowl
  3. Add pickles, onion and optional garlic.
  4. Combine pickle juice, french dressing and 1 cup mayonnaise and pour over salad
  5. Stir to evenly coat all potatoes with dressing. If mixture is too dry, add up to 1/2 cup more mayonnaise (thinned with pickle juice and/or french dressing if desired).
  6. Taste, add salt and pepper and adjust seasonings to your taste
  7. Chill and serve

Don't use Low Fat or Diet Mayonnaise!
