Quick Vanilla Pudding
I absolutely love vanilla custards. This is a quick one or two person serving for after dinner. Very satisfying. If I'm being good, I use soy milk
and less sugar -
the texture is slightly more grainy than with cows milk, but still delicious.
What you need
- 1 large egg
- 3/4 cup milk
- 1 - 2 tbl sugar
- 1/2 tsp vanilla extract or 1/4 vanilla bean split and scraped
How to make it
- In a heavy saucepan, whisk together egg, milk and sugar (and vanilla bean if using)
- Over low heat, stirring constantly, cook pudding until thickened
- Remove from heat and stir in vanilla extract (or pour through strainer to remove vanilla bean)
- Cool slightly and serve (I like this warm)
