Quick Vanilla Pudding

I absolutely love vanilla custards. This is a quick one or two person serving for after dinner. Very satisfying. If I'm being good, I use soy milk and less sugar - the texture is slightly more grainy than with cows milk, but still delicious.

What you need

  1. 1 large egg
  2. 3/4 cup milk
  3. 1 - 2 tbl sugar
  4. 1/2 tsp vanilla extract or 1/4 vanilla bean split and scraped

How to make it

  1. In a heavy saucepan, whisk together egg, milk and sugar (and vanilla bean if using)
  2. Over low heat, stirring constantly, cook pudding until thickened
  3. Remove from heat and stir in vanilla extract (or pour through strainer to remove vanilla bean)
  4. Cool slightly and serve (I like this warm)
