Red Quinoa with Peas

The red quinoa is pretty, but any color will cook the same.

What you need

  1. 1/2 cup red or other quinoa
  2. 1 large shallot, minced
  3. 1 clove garlic, minced
  4. 1/2 tsp salt
  5. 1 cup vegetable or chicken broth
  6. 1 tsp mixed dried herb such as herbs de provence or italian seasoning
  7. 1 tsp fresh sage or 1 tbl parsley or basil
  8. 1 cup frozen green peas, thawed

How to make it

  1. Sauté shallot in olive oil until just beginning to brown
  2. Add garlic, salt, dried herb and quinoa and sauté until quinoa is toasted and sizzles (about 2-5 minutes)
  3. Add broth and fresh herb, reduce heat to low, cover and cook 20-25 minutes, until quinoa is tender
  4. Add green peas, cover and turn off heat
  5. Let rest for 5 - 10 minutes for peas to heat through
  6. Stir and serve
