Red Quinoa with Peas
The red quinoa is pretty, but any color will cook the same.
What you need
- 1/2 cup red or other quinoa
- 1 large shallot, minced
- 1 clove garlic, minced
- 1/2 tsp salt
- 1 cup vegetable or chicken broth
- 1 tsp mixed dried herb such as herbs de provence or italian seasoning
- 1 tsp fresh sage or 1 tbl parsley or basil
- 1 cup frozen green peas, thawed
How to make it
- Sauté shallot in olive oil until just beginning to brown
- Add garlic, salt, dried herb and quinoa and sauté until quinoa is toasted and sizzles (about 2-5 minutes)
- Add broth and fresh herb, reduce heat to low, cover and cook 20-25 minutes, until quinoa is tender
- Add green peas, cover and turn off heat
- Let rest for 5 - 10 minutes for peas to heat through
- Stir and serve
