Roasted Peaches

We have a peach tree that produces more than you can imagine. This is a great way to preserve peaches, but also just wonderful as a dessert.

What you need

  1. 4 firm ripe peaches
  2. 1-2 tbl sweetener
  3. 1 tbl Margarine or Butter
  4. White Wine or Brandy
  5. Fresh Raspberries or Vanilla Ice Cream

How to make it

  1. Preheat oven to 400º
  2. Peel peaches, cut in half and remove pits
  3. Toss in a bowl with sugar
  4. Butter the bottom of a baking dish just large enough to hold the peaches in a single layer
  5. Place peaches cut side down in dish and sprinkle with white wine or brandy
  6. Roast for 5 minutes and check for doneness (you don't want them to become mush)
  7. Turn and roast an additional 5 minutes or until done
  8. Remove from pan and serve warm with fresh raspberries or Vanilla Ice Cream
