Quinoa, Simply Seasoned
Any color or mixed quinoa is fine for this.
What you need
- 1/2 cup red or other quinoa
- 1/2 tsp sweet spanish paprika
- 1/4 tsp garlic granules
- 1/4 tsp onion granules
- pinch saffron
- 1/2 tsp kosher salt
- 1 cup water
How to make it
- Rinse quinoa very well in cold running water to remove the coating of saponin - drain well
- Heat oil in sauce pan over medium heat
- Add quinoa and stir to coat with oil
- Toast quinoa for several minutes
- Add water and dry seasonings
- Reduce heat to very low, cover and cook 20-25 minutes until quinoa is tender and tails have appeared
- Turn off heat and let stand 10 minutes before serving
This is a nice as a side dish. Also works well as stuffing for bell peppers with some minced shallot, minced garlic and grated cheese.
