Quinoa, Simply Seasoned

Any color or mixed quinoa is fine for this.

What you need

  1. 1/2 cup red or other quinoa
  2. 1/2 tsp sweet spanish paprika
  3. 1/4 tsp garlic granules
  4. 1/4 tsp onion granules
  5. pinch saffron
  6. 1/2 tsp kosher salt
  7. 1 cup water

How to make it

  1. Rinse quinoa very well in cold running water to remove the coating of saponin - drain well
  2. Heat oil in sauce pan over medium heat
  3. Add quinoa and stir to coat with oil
  4. Toast quinoa for several minutes
  5. Add water and dry seasonings
  6. Reduce heat to very low, cover and cook 20-25 minutes until quinoa is tender and tails have appeared
  7. Turn off heat and let stand 10 minutes before serving

This is a nice as a side dish. Also works well as stuffing for bell peppers with some minced shallot, minced garlic and grated cheese.
