Smoked Leg of Lamb
This is a nice way to have leg of lamb in warm weather without heating up the house.
What you need
- 6 lb leg of lamb
- Seasonings to taste
- Fruit wood for smoking
How to make it
- Prepare your grill to medium heat - smoker to about 300º
- Bring lamb to room temperature
- Place smoking wood onto coals and place lamb on grill
- Cook for about 3 hours or until done to your liking
At 300º, lamb takes about 30 minutes per pound to reach medium doneness or about 160º internally.
