Smoked Leg of Lamb

This is a nice way to have leg of lamb in warm weather without heating up the house.

What you need

  1. 6 lb leg of lamb
  2. Seasonings to taste
  3. Fruit wood for smoking

How to make it

  1. Prepare your grill to medium heat - smoker to about 300º
  2. Bring lamb to room temperature
  3. Place smoking wood onto coals and place lamb on grill
  4. Cook for about 3 hours or until done to your liking

At 300º, lamb takes about 30 minutes per pound to reach medium doneness or about 160º internally.
