Smoked Standing Rib Roast

If you can master this, you'll have people begging for invitations to your dinner parties! This is incredible prepared rare or medium rare (130-135 degrees).

What you need

  1. 3-4 rib beef prime rib roast
  2. Oak wood for smoking

How to make it

  1. Bring the roast to room temperature by removing from the refrigerator about 1 hour before cooking
  2. Prepare grill or smoker so that the roast can be cooked off the heat (when coals are ashed over, move them to the side of the grill opposite the vents.
  3. Soak oak wood for about 30 minutes to 1 hour.
  4. Place roast directly on grill or in a pan on the grill, beneath or over the vents opposite the coals
  5. Depending on the heat and temperature of your cooker, this doesn't take long, so be careful not to overcook. Try to avoid cooking at too high heat. Add soaked oak as needed.
