Smoked Tomatoes

Serve one tomato per person. This is a delicious side-dish and can be experimented with.

What you need

  1. 4 medium fleshy home grown or organic tomatoes
  2. Fresh basil leaves
  3. Blue Cheese or combination of blue and other medium-soft cheeses

How to make it

  1. Cut the top 1/3 inch off the tomato
  2. Using a teaspoon, carefully remove the inside of the tomato, leaving about 1/2 inch of flesh
  3. Sprinkle salt & pepper inside each tomato
  4. Line the inside of the tomatoes with basil leaves
  5. Fill the tomatoes with cheese
  6. Place at the edge of the grill or smoker until cheese is melted and tomato is cooked
