Smothered Pork Loin Chops

What you need

  1. 6 boneless pork chops, 3/4 inch thick
  2. 1/4 cup thinly sliced sweet green pepper
  3. 1 small onion, thinly sliced
  4. 1 cup chicken broth
  5. 2 Tablespoons flour
  6. 1 tsp ground sweet paprika
  7. 1/2 tsp garlic powder
  8. 1/2 tsp onion powder
  9. 1/2 tsp sea salt
  10. ground black pepper
  11. 2 Tablespoons chopped fresh sage leaves
  12. Olive oil
  13. Unsalted Butter (optional)

How to make it

  1. Preheat oven to 350º
  2. Mix flour and dry spices
  3. Pat chops dry with paper towels, then sprinkle with half the seasoned flour on both sides
  4. Put onion and pepper slices into a bowl and toss with the remaining seasoned flour
  5. Heat a large skillet over medium high with 2 Tablespoons olive oil (and 1 T optional butter if desired)
  6. When hot, quickly brown chops on both sides - not more than 2 minutes per side - then place chops into a baking dish in a single layer (can be slightly overlapping)
  7. Reduce pan heat to medium and add 1 T olive oil (or butter)
  8. Sauté onions and pepper until starting to brown, add chicken broth with chopped sage and cook until sauce has thickened slightly
  9. Pour sauce over chops, spreading onion/peppers evenly over
  10. Bake for 35-45 minutes - remove from oven and transfer chops to a plate - cover with foil and let stand 10 minutes
  11. Pour sauce into a fat separator
  12. Serve defatted sauce on the side
