Smothered Pork Loin Chops
What you need
- 6 boneless pork chops, 3/4 inch thick
- 1/4 cup thinly sliced sweet green pepper
- 1 small onion, thinly sliced
- 1 cup chicken broth
- 2 Tablespoons flour
- 1 tsp ground sweet paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- ground black pepper
- 2 Tablespoons chopped fresh sage leaves
- Olive oil
- Unsalted Butter (optional)
How to make it
- Preheat oven to 350º
- Mix flour and dry spices
- Pat chops dry with paper towels, then sprinkle with half the seasoned flour on both sides
- Put onion and pepper slices into a bowl and toss with the remaining seasoned flour
- Heat a large skillet over medium high with 2 Tablespoons olive oil (and 1 T optional butter if desired)
- When hot, quickly brown chops on both sides - not more than 2 minutes per side - then place chops into a baking dish in a single layer (can be slightly overlapping)
- Reduce pan heat to medium and add 1 T olive oil (or butter)
- Sauté onions and pepper until starting to brown, add chicken broth with chopped sage and cook until sauce has thickened slightly
- Pour sauce over chops, spreading onion/peppers evenly over
- Bake for 35-45 minutes - remove from oven and transfer chops to a plate - cover with foil and let stand 10 minutes
- Pour sauce into a fat separator
- Serve defatted sauce on the side
