Spanish Rice

The instructions for preparing the rice for this recipe are for the microwave, but pre-cooked rice can be substituted, or cook rice according to package directions on the stove top.

What you need

  1. 1 lb. ground beef
  2. 1 28 oz. can tomato sauce or Tomato Juice
  3. 1 - 1 1/2 cups water
  4. 1 onion, chopped
  5. 1/2 green or red pepper, finely diced
  6. Black pepper to taste
  7. 2 Tbl sweet paprika
  8. 1 large can sliced black olives
  9. 1 cup Jasmine rice
  10. 1 3/4 cups water
  11. 1 tsp salt
  12. 1-2 Tbl Butter

How to make it

  1. Brown ground beef with onion.
  2. Season with ground black pepper
  3. Add tomato sauce or juice, water, green or red pepper, black olives, Paprika and black pepper.
  4. Simmer for about 20 - 30 minutes.
  5. In a 2 quart microwave dish, combine 1 3/4 cups water, Jasmine rice, butter and salt.
  6. Cover and microwave on high for 5 minutes. Reduce heat to 50 % and microwave for 15 minutes more.
  7. Fluff with fork and add to sauce. You may choose not to add all the rice depending on the consistency of the dish.
  8. Turn off heat and let stand a few minutes before serving.

This can be prepared early and reheated to serve later. It is excellent the next day. - Sauce can be prepared ahead. The finished dish should be slightly saucy, so don't add all the rice at one time.
