Warm Spice Cake

What you need

  1. 1/4 cup butter or shortening (can use soy margarine)
  2. 3/4 cup sugar
  3. 1/2 tsp vanilla
  4. 2 eggs, beaten
  5. 1 cup flour
  6. 1/2 tsp baking powder
  7. 1/2 tsp baking soda
  8. 1/2 tsp nutmeg
  9. 1/2 tsp cinnamon
  10. 1/4 tsp cloves
  11. 1/2 cup milk (can use soy milk)
  12. 1/4 cup butter (can use soy margarine)
  13. 1 cup brown sugar
  14. 2 tbl milk
  15. 1 cup flaked coconut
  1. Cream butter and add sugar gradually
  2. Add vanilla, beat in eggs one at a time
  3. Combine dry ingredients and add alternately with milk
  4. Pour into a greased and floured 8 inch square or 7 x 11 inch pan
  5. Bake at 350 for 30-40 minutes
  6. Cream butter and brown sugar together
  7. Add milk and mix well
  8. Stir in coconut
  9. Let cake rest 5 minutes and while still warm, spread frosting evenly over top
  10. Place frosted cake under broiler about 4 inches from heat until golden brown. You may want to shift the cake a couple of times to avoid hot spots.

Cut and serve warm.
