Spicy Roast Chicken
What you need
- 1 - 5 lb.+/- chicken, dried inside and out with paper towels
- 1 recipe special dry rub
- 1 lemon or lime, cut into wedges
- 3-4 garlic cloves, cut in half
- Kosher Salt
- Olive oil
How to make it
- Preheat oven to 450º
- Sprinkle top of lemon or lime with 1 tsp kosher salt
- Place salted citrus and garlic inside cavity of chicken
- Rub chicken all over with olive oil
- Starting on the back, sprinkle dry rub lightly but evenly over back, then sides and lastly the breast
- Place chicken on a rack in roasting pan
- Place in oven and reduce heat immediately to 350º
- Calculate exact weight by 20 minutes per pound to derive total cooking minutes. (A 5 lb. chicken would require 1 hour and 40 minutes) Add about 10-15 minutes to the total cooking minutes.
- Let stand 20-30 minutes, lightly covered with foil before carving.
