Spicy Roast Chicken

What you need

  1. 1 - 5 lb.+/- chicken, dried inside and out with paper towels
  2. 1 recipe special dry rub
  3. 1 lemon or lime, cut into wedges
  4. 3-4 garlic cloves, cut in half
  5. Kosher Salt
  6. Olive oil

How to make it

  1. Preheat oven to 450º
  2. Sprinkle top of lemon or lime with 1 tsp kosher salt
  3. Place salted citrus and garlic inside cavity of chicken
  4. Rub chicken all over with olive oil
  5. Starting on the back, sprinkle dry rub lightly but evenly over back, then sides and lastly the breast
  6. Place chicken on a rack in roasting pan
  7. Place in oven and reduce heat immediately to 350º
  8. Calculate exact weight by 20 minutes per pound to derive total cooking minutes. (A 5 lb. chicken would require 1 hour and 40 minutes) Add about 10-15 minutes to the total cooking minutes.
  9. Let stand 20-30 minutes, lightly covered with foil before carving.
