Mary's Spinach Salad

What you need
- 2 packages baby spinach
- 8 strips bacon, fried crisp, chopped
- 4 hard-boiled eggs (whites only), chopped
- 1 cup salad oil
- 5 tablespoons red wine vinegar
- 1 1/2 tsp salt
- 1/2 tsp dry mustard or prepared mustard
- 2 tsp chopped parsley
- 2 cloves crushed garlic
- 4 tablespoons sour cream
- Ground Black Pepper
How to make it
- Combine dressing ingredients and let stand 6 hours before using
- Combine spinach, bacon and egg
- Dress just before serving
