Spinach Salad
What you need
- 1 cup Extra Virgin Olive oil
- 1/3 - 1/2 cup Balsamic Vinegar
- 1 tsp Dijon Mustard
- 1 clove garlic, crushed
- Salt and Pepper
- 1 lb fresh spinach
- 1 1/2 cups dried cranberries or fresh fruit
- 1/2 cup crumbled blue cheese
- Coarsely chopped pecans
How to make it
- Combine oil, vinegar, mustard, garlic, salt and pepper and mix well
- Place spinach in a large serving dish and sprinkle cranberries and pecans over the top
- Dress with plenty of dressing
This is delicious just as written, but if you want to use it for a main meal, you can meat and hard cooked eggs.
