Spinach Salad

What you need

  1. 1 cup Extra Virgin Olive oil
  2. 1/3 - 1/2 cup Balsamic Vinegar
  3. 1 tsp Dijon Mustard
  4. 1 clove garlic, crushed
  5. Salt and Pepper
  6. 1 lb fresh spinach
  7. 1 1/2 cups dried cranberries or fresh fruit
  8. 1/2 cup crumbled blue cheese
  9. Coarsely chopped pecans

How to make it

  1. Combine oil, vinegar, mustard, garlic, salt and pepper and mix well
  2. Place spinach in a large serving dish and sprinkle cranberries and pecans over the top
  3. Dress with plenty of dressing

This is delicious just as written, but if you want to use it for a main meal, you can meat and hard cooked eggs.
