Spring Greens Salad

From an organic garden or farmer's market. Taste each ingredient to decide how much to use.

What you need

  1. Wild arugula leaves
  2. Baby chard leaves
  3. Small kale leaves
  4. Nasturtium leaves and blossoms
  5. Violet blossoms
  6. Spring onions or baby leeks, finely sliced
  7. Oregano leaves
  8. Thyme leaves
  9. Lemon juice
  10. Olive oil
  11. Kosher salt & Pepper

How to make it

  1. Combine leaves and onion/leeks in a bowl
  2. Squeeze juice of 1/2 lemon over
  3. Add salt & pepper and olive oil
  4. Toss gently
  5. Place on chilled plates and add flowers over the top before serving
