Spring Greens Salad
From an organic garden or farmer's market. Taste each ingredient to decide how much to use.
What you need
- Wild arugula leaves
- Baby chard leaves
- Small kale leaves
- Nasturtium leaves and blossoms
- Violet blossoms
- Spring onions or baby leeks, finely sliced
- Oregano leaves
- Thyme leaves
- Lemon juice
- Olive oil
- Kosher salt & Pepper
How to make it
- Combine leaves and onion/leeks in a bowl
- Squeeze juice of 1/2 lemon over
- Add salt & pepper and olive oil
- Toss gently
- Place on chilled plates and add flowers over the top before serving
