Strawberry Jam with Agave

What you need

  1. 4 1/2 cups stemmed and halved (or quartered) strawberries
  2. juice from 1 lemon
  3. 1/4 cup dark agave syrup
  4. pinch salt

How to make it

  1. Place everything into a heavy saucepan and bring to a low boil
  2. Cook for up to an hour until thickened and a spoon run through the pan leaves a trail on bottom
  3. Pour into a 2 cup sterilized jar and put a seal on top
  4. Process for long storage or refrigerate for use within 2 weeks

You can add 1/2 cup of fresh blueberries. It adds a deeper color and a slightly intense flavor.
