Strawberry Jam with Agave
What you need
- 4 1/2 cups stemmed and halved (or quartered) strawberries
- juice from 1 lemon
- 1/4 cup dark agave syrup
- pinch salt
How to make it
- Place everything into a heavy saucepan and bring to a low boil
- Cook for up to an hour until thickened and a spoon run through the pan leaves a trail on bottom
- Pour into a 2 cup sterilized jar and put a seal on top
- Process for long storage or refrigerate for use within 2 weeks
You can add 1/2 cup of fresh blueberries. It adds a deeper color and a slightly intense flavor.
