Summer Luncheon Salad

What you need

  1. 1 large seedless cucumber (or 4 small persian cucumbers)
  2. 12 oz. grape tomatoes or cherry tomatoes
  3. 1/2 cup diced dry salami
  4. 1 small clove garlic, grated
  5. Red Wine Vinegar
  6. Olive Oil
  7. 10-12 leaves fresh basil
  8. Freshly ground black pepper
  9. Kosher salt

How to make it

  1. Wash and dry the cucumber - do not peel
  2. Cut cucumber into 1/2 inch dice
  3. Cut grape tomatoes in half (cherry tomatoes in quarters)
  4. Combine vegetables with salami in a serving bowl
  5. In a small bowl add grated garlic to 1/4 cup red wine vinegar
  6. Pour over vegetables and add olive oil to taste (a couple turns around the bowl is ample)
  7. Coarsely chop basil and add salt & pepper to taste
  8. Mix gently and taste to adjust seasoning
  9. Serve at room temperature
