Summer Viniagrette
I think this lighter version of vinaigrette is great for summer
salads or cold vegetables.
What you need
- Extra Virgin Olive Oil
- Red Wine Vinegar
- Garlic, crushed
- Sweetener
- Dijon Mustard or Dry mustard
- Freshly ground black pepper
- Salt
How to make it
- In a jar with a tight fitting lid, pour the desired amount of olive oil
- Add vinegar to the desired proportion
- Add garlic, sugar, mustard, salt and pepper
- Close jar tightly and shake until combined
- Dress the salad just before serving
No proportions are given - this is made to taste. If you're not sure how to begin
start with 1 cup oil, 1/3 - 1/2 cup vinegar, 1 small clove garlic, 1/4 tsp sugar, 1/4 tsp dry mustard or 1 tsp dijon, salt and pepper.
Adjust to your own taste.
