Another Taco Salad

What you need

  1. Iceberg lettuce, chopped or shredded
  2. 1 lb ground turkey or beef, browned
  3. 1 tbl or more chili powder
  4. 1 tsp ground cumin
  5. 1/2 tsp ground coriander
  6. 1/2 tsp garlic powder
  7. 1/2 tsp onion powder
  8. 1/2 tsp turmeric (optional)
  9. salt & pepper
  10. 1/4 lb grated cheese
  11. 2-3 corn tortillas, fried crisp and cut into 1 inch pieces
  12. 1 can pinto or kidney beans (optional)
  13. 1/4 cup chopped red onion or scallions
  14. 1 avacado diced
  15. 2 tomatoes diced
  16. 1 cucumber diced
  17. 1 jar Trader Joes Salsa Autentica*
  18. Sour cream (optional)

How to make it

  1. Sauté ground meat in a skillet until just cooked through
  2. Add chili powder, cumin, coriander, garlic and onion powder
  3. Cook for 2 minutes, stirring to combine
  4. Add 1/4 - 1/2 cup water and simmer until spices have blended
  5. Taste and add salt & pepper
  6. Remove from heat and let cool slightly
  7. Combine lettuce, beans, onion, and cucumber in a very large bowl
  8. Add grated cheese and tortilla pieces and mix well
  9. Top with ground beef, tomato, and avacado
  10. Use the salsa as a salad dressing and garnish with optional sour cream

You can add the beef fairly warm, but it does wilt the lettuce quickly. To season the meat you could also use a packaged taco seasoning mix, but I don't like to purchase products with preservatives or chemical additives. Be sure to disperse the cheese well or you'll have a lump of melting cheese in one spot. Trader Joes Salsa Autentica comes in medium hot and has a nice bite. It is a perfect taco salad dressing if you aren't shy of heat. If you prefer something not so healthy and a bit sweet, try the Sweet & Sour Dressing ala Pueblo del Sol.
