Basic Tomato Sauce

Great quick sauce for pasta or to use in anthing requiring crushed tomatoes or tomato sauce.
4 cups peeled, seeded and diced tomatoes
Olive Oil
Garlic
Salt & Pepper
Crushed red pepper flakes (optional)
- Heat a large skillet and add olive oil
- Add garlic and hot pepper flakes and cook a few minutes
- When garlic just begins to color, add tomatoes
- Add salt & pepper and bring to a boil
- Reduce heat and simmer until tomatoes break down (usually about 15 - 20 minutes)
- Add cooked pasta or use in other recipes
