Penne Pasta with Tuna Sauce

This is a great lunch recipe and completely acceptable as a one dish meal. Of course, you could add a small salad and / or bread too. Alone this will serve two.

What you need

  1. 1 6-7oz. can tuna in water
  2. 1/3 lb. dried penne pasta
  3. 3 green onions, thinly sliced
  4. 1 large garlic clove, minced
  5. grated nutmeg
  6. Olive Oil
  7. 1 cup heavy cream
  8. 1 heaping tbl Besan or Wheat flour
  9. 2 cups (or several large handfuls) arugula leaves
  10. 1/4 cup minced fresh basil
  11. Salt & Pepper to taste

How to make it

  1. Cook pasta and set aside
  2. In a saucepan over medium heat, sauté green onion in olive oil until softened
  3. Add garlic and sauté briefly
  4. Sprinkle with besan or wheat flour and cook, whisking until bubbly and lightly colored (about 2-3 minutes)
  5. Slowly add heavy cream, whisking to avoid any lumps
  6. Stir in tuna breaking up any large pieces
  7. Add nutmeg and cook until slightly thickened
  8. Add pasta and cook about two minutes
  9. Turn off heat add arugula and stir
  10. Cover pan and let stand about 3-5 minutes
  11. Serve topped with minced basil
