Tuna & Avocado Salad
What you need
- 1 can chunk light tuna in water or oil
- 1/2 celery stalk, diced very small
- 1" by 4" strip of red pepper, diced very small
- 1/4 cup finely minced onion
- 1/4 cup cucumber diced very small
- 1 tbl dijon mustard
- 1 tbl mayonnaise or more to suit your taste
- Salt and Pepper to taste
- 2 avocados, cut in half and pits removed
- Chopped parsley
How to make it
Drain tuna and flake with a fork
Add celery, red pepper, onion and cucumber and mix well
Combine mustard and mayo and mix into tuna mixture
Add salt and pepper to taste
Using a dessert spoon, remove avocado halves from their skins and place on a salad plate
Divide the tuna placing a scoop into each avocado half
Garnish the plate edges with some chopped parsley
