Turkey & Spinach Meatloaf

I first made this one night when Frank hadn't been feeling well. Food wasn't agreeing with him and this was a mild combination. It could easily be jazzed up, but doesn't need anything - the flavors are excellent.

What you need

  1. 1 package ground turkey light & dark meat combo (about 1 1/4 lbs)
  2. 1 lb. package frozen, chopped spinach
  3. 1 large egg
  4. 1 - 2 Tbl Worcestershire Sauce
  5. Salt & Fresh ground black pepper
  6. Olive oil

How to make it

  1. Thaw spinach, wrap in tea cloth or dish towel to press out liquid
  2. Preheat oven to 350º
  3. Combine all ingredients in a large bowl and mix well
  4. Lightly brush a baking dish with olive oil
  5. Form meat mixture into an oval loaf and flatten lightly on top so it is approximately equally thick
  6. Brush top lightly with olive oil
  7. Bake for approximately 1 1/4 hours until turkey is well done
