Tuscan Tuna Salad

What you need

  1. 1x 5 oz or 7 oz can tuna packed in water - salt free if possible
  2. 2 scallions, minced
  3. 1 tbl capers
  4. 2 tbl fresh parsley, chopped
  5. 1 tbl green olive tapenade or 1 tbl minced green olives
  6. 1/2 oz diced provolone cheese
  7. Juice of 1 lemon
  8. Kosher or sea salt to taste
  9. Olive oil to taste

How to make it

  1. Flake tuna into a small bowl
  2. Ad scallion, capers, parsley, olive tapenade, cheese and combine well
  3. Add lemon juice, salt and olive oil to taste
  4. Serve as is or on lettuce leaves

Would make a great lettuce wrap
