Tuscan Tuna Salad
What you need
- 1x 5 oz or 7 oz can tuna packed in water - salt free if possible
- 2 scallions, minced
- 1 tbl capers
- 2 tbl fresh parsley, chopped
- 1 tbl green olive tapenade or 1 tbl minced green olives
- 1/2 oz diced provolone cheese
- Juice of 1 lemon
- Kosher or sea salt to taste
- Olive oil to taste
How to make it
- Flake tuna into a small bowl
- Ad scallion, capers, parsley, olive tapenade, cheese and combine well
- Add lemon juice, salt and olive oil to taste
- Serve as is or on lettuce leaves
Would make a great lettuce wrap
