Vegetarian Gravy

1 tbl soy margarine
1 tbl olive oil
2 tbl unbleached white or whole wheat flour
2 cups vegetable broth, heated
  • Melt margarine in olive in a saucepan over medium heat
  • When melted, stir in flour and mix well
  • Allow to cook several minutes, until flour has absorbed the fat
  • Add about 1/3 cup vegetable broth and whisk until no lumps remain and liquid is absorbed
  • Continue adding small amount of broth until half of it is added, whisking to incorporate and remove lumps
  • Add remaining broth and whisk until blended
  • Cook over medium heat until thickened
