Vegetarian Gravy

What you need

  1. 1 tbl soy margarine
  2. 1 tbl olive oil
  3. 2 tbl unbleached white or whole wheat flour
  4. 2 cups vegetable broth, heated

How to make it

  1. Melt margarine in olive in a saucepan over medium heat
  2. When melted, stir in flour and mix well
  3. Allow to cook several minutes, until flour has absorbed the fat
  4. Add about 1/3 cup vegetable broth and whisk until no lumps remain and liquid is absorbed
  5. Continue adding small amount of broth until half of it is added, whisking to incorporate and remove lumps
  6. Add remaining broth and whisk until blended
  7. Cook over medium heat until thickened
