White Chili
What you need
- 2 cups cooked chicken
- 1 can Canellini beans (white kidney beans)
- 1 tbl oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 2 jalapeno peppers
- 1 4 oz. can diced green chiles
- 2 tsp ground cumin
- 1 tsp oregano
- 1/2 tsp cayenne (or to taste)
- 1 tbl cornmeal or flour
- 16 oz chicken broth
How to make it
- Slowly cook onion until tender over med/med-low heat
- Add garlic, jalapeno, cumin, oregano and cayenne.
- Cook until jalapeno is tender.
- Add cornmeal or flour & stir until warm
- Add remaining ingredients and cook over low heat until flavors are incorporated.
This is a thin sauce and is delicious served over rice.
