Whole Grain Bread

Use soymilk for dairy free and low fat. Use a nutritionally 'good' sweetener. The seeds can be combined in any proportions you like keeping to six tablespoons total.

What you need

  1. 1 1/2 cups milk or plain soymilk or water
  2. 1 Tbl Olive Oil
  3. 1 tsp Kosher Salt
  4. 1-2 Tbl agave syrup or 1/8th tsp pure stevia powder
  5. 2 Tbl poppy seeds (or use Sunflower seeds)
  6. 1 Tbl Sesame seeds (or double the Flax seeds)
  7. 1 Tbl Flax seeds
  8. 1 Tbl Millet
  9. 1 Tbl Quinoa
  10. 3 1/2 cups whole wheat flour (fresh - stored in freezer)
  11. 2 tsp yeast (fresh - stored in refrigerator)
  12. 4 Tbl Wheat Gluten (optional for rise)

How to make it

  1. Place ingredients in bread maker pan according to instructions for your machine.
  2. Set to whole wheat/white bread setting, medium crust.

This recipe is delicious with a good texture. It should be stored in the refrigerator. It can also be made on the dough setting and then formed into equal sized balls. Let rise 35 minutes after forming covered with a cloth, then brush with water and bake at 375-400 for 20-30 minutes.

It's important to always use fresh whole wheat flour. Because the fiber and protein are intact on the grain when it's ground, it will spoil more readily than white flours will.
