Pears Poached in Red Wine

Use firm pears for this recipe and a good fruity red wine like Zinfandel is delicious.

What you need

  1. 4 Bosc Pears or other very firm pears
  2. Juice of 1 lemon in 2 1/4 cups water
  3. Peel of 1 orange
  4. 2/3 cup sugar
  5. 1/2 to one Bottle Red Wine
  6. 1 stick cinnamon
  7. Pinch salt

How to make it

  1. Peel pears leaving the stem on and place in lemon water
  2. Remove a pear from the water and very carefully cut in half, directly through the stem if possible (leaving part of the stem on each half
  3. Use a teaspoon to remove core and blossom end
  4. Place pears into a large pot face down in a single layer
  5. Add sugar, orange peel, cinnamon stick, salt and pour wine over
  6. When the wine begins to boil, reduce heat and simmer for about 30-40 minutes until tender
  7. Carefully remove the pears from the syrup and set aside
  8. Return syrup to a boil and reduce by half
  9. These can be served chilled, but they're very nice warm - make ahead and warm just before serving
  10. Place two warmed pear halves on a dessert plate and spoon warmed syrup over the top

Serve with ice cream or just as they are
